We have a Swift Bessacarr E560, this w/e we tried camping without an electric hook up. The only thing we couldn't fathom out how to get to work was the water heater!
Any ideas? I am sure it is operator error, but the panel is not the easiest to get to grips with. How long should it take for water to heat up using the leisure battery?
Not sure on your MH but normally water heater runs off gas. In ours there is a separate control for 240vac or gas for the heater. Sometimes I have to turn the gas control on and off a couple of times till I get a constant green light.
I assume your water heating is gas and electric. If you are off hook-up, then you need to set to gas - it won't work on electric when off hook-up. That is mains only.
How long should it take to heat up when we do it properly?
It depends
Ours is a Truma, and from 'cold' to the lower of the two temperature settings (which is sufficient for showers) takes about 20 minutes in the summer. In the winter, when the van (and therefore the water in the Truma) is a little cooler, it can take 30 minutes or so.

If it's the same as our Bolero, then there are 2 dials. If you turn the right one to the 3 o'clock position (picture of a little flame) and then turn the left one fully anti clockwise to the 60 degree sign, then that should start it heating on gas.
We switch ours on when we wake up. Then by the time the kettle has boiled, we've had a cup of tea and got up, put away the bed etc........the shower is ready to use.
