Quince is high in pectin, so you could make quince jam?

Quince jam/jelly - goes well with goat's cheese.

Google may be awash with recipes, but which of them works well? I am an avid cook but am struggling to find reliable quince recipes, hence the request.

Quince jelly or cheese (membrillo). Made some last year, it involved simmering them in cider for hours. Brilliant! Google quince jelly/cider.

Sadly our quince tree has really suffered this year - my wife often makes a brilliant quince, apple and orange crumble (quince really adds depth of flavour), but I can't find the recipe online. These look close though:

Plus some ideas at http://simplyrecipes.com/recipes/quince/ .
