we use quince to make a jelly for use with roast chicken and turkey etc

cut up and boil quince

put through muslin bag

1 pint of juice to 1lb of sugar boil till it's set

not too difficult as there is loads of pectin in the fruit

perfecto with game

Another suggestion from Flo:

Why not try and get in touch with a local producer at the market or a local patisserie who would turn it into quince jelly or quince pate de fruit?

Apparently, she used to do this regularly herself with her excess quince from her garden in Aix en Provence....


MMMmmmmmm quince jelly..............yum!!

There is, I understand, a old recipe in which the quince is sliced and combined with mince.*. The appropriate cutlery to set for this dish is a runciple spoon. Traditionally served in moonlight.

*Unfortunately sources do not make it clear whether the mince in this recipe is the mincemeat or minced meat variety.
