There are no shoes as its all pads,all new, but the disc has got hot in the past.
Are you ABSOLUTELY CERTAIN about this Simon?
I'm not an expert on Iveco but would be very surprised if the handbrake acts on pads. Shoes are the norm on vans (in addition to disc and pads for normal braking) and your problem is exactly typical of a pad/drum situation where the handbrake has been incorrectly adjusted by shortening the handbrake cable.
Be warned - you cannot see the drums on these arrangements, even with the calipers removed and the discs exposed the brakes look exactly like normal discs. You need to actually remove the disc itself from the hub to see the drum and shoes.

I don't know if this helps but when i have had my Iveco serviced i was told if the rear axle oil isn't changed at the correct intervals you can suffer rear axle problems.
I have just looked up the brake set up on your vehicle, I can confirm that you have disc brakes all round, however you also have brake shoes on the rear wheels, these are the handbrake shoes, a previous mechanic could have adjusted the cables to adjust the hand brake, which is the wrong thing to do, or adjusted the shoes too much.
imagine a top hat on it's side the brim is the disc that you see the pads touch, the other is where the brake shoes are.you have to remove the caliper first, you may be lucky and not have to slacken the brake hose to do this.then undo the bolts that hold the disc/drum on.if this will not come off, there is a small hole in the fron of this drum, shine a light in and as you turn the drum look for an adjuster, a knurled nut normally
slacken this off.if the heat has warped the drum you may need to use a hammer to drift it off use a block of wood between the hammer and disc and you will need new drum and shoes.
Oh yes while you have the caliper off,DO NOT DEPRESS THE BRAKE PEDAL,or you will have to reassemble the caliper and bleed the brakes.
