What I don't want
1 a laptop
2 a mac
3 an incomplete system
so that eliminates some of your suggestions.
I don't do any gaming at the moment, but I used to spend a lot of time with Flight Sims, so its very possible that I may return there.
Also, I don't want something that does the job adequately, I want a PC that does what it does very well, hence my budget. My thinking on this is that it if I have an high end spec now, it should also last longer than a lower spec machine.
I do quite a bit of photography and produce my own slide shows, and I have recently purchased Proshow Producer. Initial runs with the program shows it does complex transitions & effects, so another reason for a better spec machine.
I am very tempted by the all in one, even if my budget has to go up, But I can get a better spec for the less money with a tower
I am not in any rush, there may be some tempting offers after Xmas
This time last year I decided that my aged laptop(which I got when I retired in 2003) needed to be replaced - I looked around at what was on offer from the various retailers and manufacturers and came down on a desktop. Having chosen a desktop which one would I buy? the choice was agonising!
Never having seen the inside of a pc I decided to buy a copy of "build your own computer" and after reading it speced my own. I bought all the bits from Aria PC including the intel core i7 860 process and xfx ATI radeon Graphics card and assembled them myself.
Everything worked beautifully first time and so far I've had twelve months trouble free with a high end spec desk top suited to my needs.
Moral - Build your own!!!! I recommend it.

I agree there are companies that will sell you the basic set up of motherboard/processed/PSU and case and for a few pound will install and bench test it. Then you only have to install hard drives, optical drives etc., a good graphics card would help your photo editing, you would need an op system.

Overclockers are close to where we live and you can visit the store to pick things up. I have used them for various bits and pieces over the years. Lots of items aimed at serious "Gamers" and some extreme high spec PCs running into thousands of pounds! However some good deals on PCs for mere mortals!
Given the reference to Flight Sims in your feedback then it is your graphics card that is most important to the performance. The better the card the better the background because the card has to render the backgrounds aas the flight progresses. My son spent a lot (£150+) on a card to get a more realistic effect of the waves on the water that was being flown over. He upgraded a basic PC he had. I believe most people think Microsoft Flight Sim is the best package?
I think he used this link (and others lost to my memory because I'm not a great fan of computer games) But bags of memory in the PC and a graphics card with its own memory is the way to improve.
Flight Sims
I'm more into video editing and slide shows so still use an aging Quad Core PC with 4GB Ram and a good video capture card and graphics card. Its always the rendering that takes the time but now you are retired you can set it going and let it get on with it overnight or during the afternoon snooze!!
I had this link in my favourites which may help i7 processors are now appearing in mid range laptops!

For £750 you can easily get an overkill spec'd PC for Flight Sim nowadays.
If your planning on getting into FSX then you will want a decent PC.

And I am delighted with it
The 24" screen is superb, and it takes up such a small amount of room! The built in speakers are the best I've heard - certainly no need to add any external one's
But it is heavy I carried it from the shop to the car and ended up by having a helping hand from a lady shopper who took pity on me
