Following from my previous post, and looking forward to a long hot summer...... how about sharing your fav barby meals.
It is apparent lots of us enjoy cooking alfresco.
On my beauclaire (bearing in mind we are vegetarians) my fav is to cook large flat mushrooms (whole) on the griddle - then to add some copped tomatoes and goats cheese to melt in.
I serve these with spring onion and sun dried tomato cous cous (add white wine to the hot liquid when preparing this)

My favorite veg on the BBQ (or cast iron griddle) is Sweetcorn cobs cut into chunks, throw into a poly bag with olive oil and black pepper, shake up to coat and bung on the grid......luverly.....runner up Asparagus tips ...a quick zizz is all they need....a close third par boiled new potatoes, same treatment as the corn cobs..in a poly bag with olive oil and herbs then roast off on the barbie.......I don't have a BBQ in the van, just a small portable griddle, but at home we have a big gas one on the patio and use it almost every night when at home in the summer....by the way, when is the summer this year...anyone know?
