Do you think the description the OED has given you is too narrow?

Indeed they are and that is why we have to have definitions. This means that what the word communicates means the same to all who read it. It would be unfair to cite particular examples but many of the photos are not of landscapes however broad you make the definition.

No. if the OED can't be relied on for an accurate definition, then what can ?

Can I make a word mean what I want it to mean a la Humpty Dumpty or do I have to use it in accordance with an understood definition ?

1) March - Landscapes - always a favourite round with MHF members
2) April - People/animal pics - straighforward,
3) May - Open round - what ever you want to enter
4) June - Motorhome - the pic must include a motorhome
5) July - 2008 - a photograph that typifies 2008
