I read all of that, was very interesting.
So as simple snapper it seems the best camera for me would be a compact with 6m/pixels, and a large sensor. Is this correct? If so any recommendations? What constitutes a large sensor, in a compact, that is.

Yes, this is correct.
Unfortunately, the camera manufacturers do not exactly boast with sensor sizes, but still with megapixels. So you need to read the fine print. Many currently available digicams have a 1/2.5" sensor, which is the smallest you can get, good enough for not more than 2.7 megapixels, but they squeeze 8 or more megapixel on it. (For comparison: An APS-C sensor as used in most digital SLR cameras, having about 13 times the surface area of an 1/2.5" sensor, would be good for up to 37 megapixel.)
Try to find one which has at least an 1/1.8", better an 2/3" sensor. Unfortunately it seems that such cameras with a reasonable pixel number are not available anymore. When looking at the currently available models, then my idea of a compromise would be the Panasonic Lumix DMC-TZ2.

depending on your budget have a look at the Canon G10 or a secondhand G9. If you can run to £300 these are the compacts to look at
Alternatively look at a used Digital SLR. Here are a couple of adverts from another forum Stew and I are on (Talk Photography):

NIKKOR 55-200 all boxed and with 2year warranty and is supplied with a spare nikkor lens hood and lens bag, this is also in perfect condition as i have not relay used it.
D40 HANNEL BATTERY GRIP this is also in immaculate condition as i have only had it 2 months
4 EN-EL9 SPARE BATTERY'S one is genuine nikon,on is a Jessops one, and 2 are hannel ones and all are in perfect working order.
2 HOYA UV FILTERS in perfect condition, no marks or scratches.
CENTON D-TREK BP 400 BACKPACK (this has only ever been used to store the gear in and never been outside.lol)
MANFROTTO MODO MAXI TRIPOD this is also in perfect condition as it has hardly ever been used.also with tripod bag.
all of this gear has cost me in total around £710 and is all practically brand new!
just checked all the prices of all of it now and all this gear will cost you £681 if you buy in the shops.
and im looking for £420 for the lot. also it will be pick up only but will be willing to meet as i am near Derby.

Due to a change to a Nikon D90 I have my Nikon D40 kit up for sale.
This was purchased new by me from Amazon.co.uk on 13 August 2008. It is supplied with the standard 18-55mm kit lens and is boxed with accessories. I will include a brand new 4Gb Sandisk Extreme III SD card and the Nikon D40/D40x Digital Field Guide (excellent reference book). £165 plus delivery, payment by BT.
From my last shot on the camera, the EXIF data file shows the camera shutter count as 957.
Should the prospective buyer require a camera bag I also have a Lowepro Nova 3 AW bag that they can have for £15 - please note this is only on offer to the buyer of the kit.
So you should be able to get a decent SLR at reasonable prices if you want.
