Welcome Barrosa,
I'm afraid I can't offer any advice, but we too will be touring France next year, after I retire at the end of March.
Does anyone know if it's possible to get "Open Return" tickets on the ferries or tunnel?

Just get a normal return with nominal dates. Sea France will alter them without charge when you decide what date you want to return, providing you inform them before the nominal return date. Others apply a small charge, usually £10 or so.
