As I'm off on a friday, I usually cook something like a chilli (whilst I,m packing the camper), this then can easily be re-heated, eaten with a french stick and washed down with a bottle of red wine for me and a few litres of cider for him!
Next day if its winter we find a pub or if its summer, then it has to be a BBQ

One of the quickest thing we usually do is
Batchelers Pasta n sauce cooked as directed on Packet!
Stir in a tin of tuna when cooked
Put in an oven proof dish
Crush a packet of cheese and onion crisps and sprinkle over the top, grate a bit of cheese over the top too.
And bung in the oven for 10 mins.
All in all this dish is done within 20 mins.

We usually pop into Morrisons on the way out and get a pre cooked chicken, a tub of florida salad and a pre done packet of salad, why cook on the first night, hey, you're supposed to be relaxing .
Ditto with a glass or 3 of red
