We Have the large double skillet,and will be using it this weekend.Hoping to cook a half leg of lamb.Can anyone give us any tips on how to do this sucessfully. Do we need to use a defuser? Confused

Yes I would use a diffuser, it will minimise hot spots

Pre heat the skillet with a little oil. place the lamb joint in the skillet [You will have already pierced the skin of the Lamb and inserted Garlic slivers into small cuts in the skin and added Rosemary sprigs ] then allow the joint to seal on all sides turning it to brown it all over.
place the par boiled potatoes around the meat ,put the lid on the Skillet and allow all to cook slowly.We used to use a diffuser but did not find it was needed so its now in the bin.BON APPETITE

I have to disagree on this one Helen. I bought it, used it once and consider it the most expensive kitchen mistake I ever made, no wonder they are always on sale on EBay.

Slow, painfully so, and the end result was yeugh.

Ite Forman grill now that is a great bit of kit.

What were you trying to cook Shen?
I have used mine nearly every night since I got it and no way would I part with it now, my main oven is now almost never used.
I have not had one failure in it yet Very Happy

hi, i have added a double skillet to my remoska, and other cooking stuff in the van, anybody got recipes, so i can make a little book of 'em? cheers raine, the double skillet recipe book was 6 squid, and i like just ordinary kinda cooking if you know what i mean!
