Hi

Does anyone have a tried and tested recipe for banoffee pie?

I have a recipe but looking for a tested version.

We have, when she get a chance I'll Pm it for you, incidentally, did you know the bloke what invented it, was, allegedly, the chef at a restaurant called the Hungry Monk whats in Jevington? which is just doen the road from me. Apparently, the same chap has no need to work again, from that one recipe.

I think its horrid. To gooey and sweet, whichis saying something for somebody who eats huge quantities of choccy.

pastry on the bottom, then a couple of tins of condensed milk, simmered *with no hole, for 2 hours, then pour disgusting liquid into pastry base, which is already cooked. then the sliced nanas, then whipped cream on top.


jeez no wonder I dont like it.



* when simmering, dont let the water go dry, obviously, but important not to cover the top of the tins of milk. ( otherwise they go bang) you're looking for about 3/4 -1 inch of toffee. Also you can use a nice biscuit base, with ginger nuts or dijestive bikkies.


if you use a biscuit base, throw the disgusting toffee out and make a proper, lemon and lime cheesecake instead, which isnt banoffee pie, but, each to his own. Laughing

Hi Russell

YES!!

Make a cheesecake style base with digestive biscuits and butter (put 6oz biscs in a plastic bag and roll with wine bottle to crush) (no you can't drink the wine till you've finished, sorry)then mix with 3oz melted butter, press into 8 or 9 " loose base flan tin lined with a circle of baking parchment or foil)(or a frying pan I guess if you've no tin?)

Open jar of dulce de leche caramel filling (plain or banana) and spread over base

slice about 5 bananas and toss in a little lemon juice just to coat. Then put them on the pie.

Whip a 284 carton of double cream (or the bigger one of you like more!) and put on the pie. grate little milk chocolate on top (or crumble a cadburys flake) If you've no whisk maybe buy the extra thick cream and make that do.

Very gorgeous, everyone likes it. hth, Ruth

Hi

I saw the pre canned caramel in Tesco at £1.64 per tin. I know I can use Nestle's milk and boil as described above. I think there is a short cut though involving Nestle's milk, brown sugar and butter.

I love Banoffee pie - yum yum in my tum.

p.s. banoffee I believe means Banana-toffee. Obvious really, but I didn't know that till recently.

Dulce de Leche is avaialble at Tesco, waitrose, sainsburys.

Custard ( although custard is like sex, even bad custard is pretty good....if memory serves me )

Oh yeah,

with a couple of cans of condensed milk made into toffee and then whipped cream on top, how will you know if the bikkies make it too sweet?

Bit like saying that the elephant put on 10lbs and now is too fat.
