Hi all,was talking with oh over brekkie this morning and discussing what food (I'd be) preparing and freezing ready to take on our french hols next month.She asked me how easily I'd coped converting to a animal free diet whilst I was living in France years back,it made me chuckle as It was very difficult(its been a few years since last in France ,and my guess would be its still hard,knowing the French love for all meat).
Anyway just thought I'd ask how many veggies on here??
A quick,delicious and highly good for you receipe:-
tin of kidney beans
3 slices of bread(crumbed)
2 tomatoes(skinned and deseeded)
2 cloves garlic
good chunk of butter(room temp)
small onion
pinch of cumin
fresh parsley/basil
drain,wash beans put in a bowl and mash or hand blend
pour boiling water over toms,lea ve for a few mins then peel skin,quater and remove seeds(this isn't critical so leave em in if u wish),chopp up finely
rip up bread into crumbs(hand blend is best if you have one)
fry finely chopped onion and cumin together till translusant
add onions,bread crumbs,and toms to beans in the bowl and mix together well
chopp up herbs of choice and mix with butter,using a piece of baking paper make a roll of mixture and pop in fridge to set hardish
with a spoon get a good dollop of bean mixture and form into a large egg shape
using a teaspoon chop a piece of herbed butter off roll and insert into center of your bean egg,close over so that butter in encased inside.slightly flatten your egg being careful not to burst out the butter
shllow fry untl golden,yum yum

Annie's been vegetarian for a number of years now, and although I'm not, we tend to eat the same stuff. Just a few years ago, she 'converted' and started eating fish again.
We've got a number of veg cook books, including The Accidental Vegetarian and an Italian Veggie cookbook, and we generally sit down one evening and plan our meals for the week ahead. It simplifies shopping this way, and we'll be freezing a number of meals to take with us (quiches, chilli, curry etc).
When we're away, we tend to eat fairly simply, and will happily feast on fish and new potatoes for our main meal.
Don't worry about being veggie in France. We tend to shop either at a local market, choosing fresh vegetables, fruit and fish, or we'll visit a large Leclerc or Champion or Super U, and fill our trolley with all sorts of lovely stuff. This year will be the first we'll have a proper freezer, se we will probably take 6-8 main meal constituents with us, and top up from large supermarkets whenever we're passing.
Less than 6 weeks, and counting ...

Hi there ASA
I was fully vegetarian for about 12 years, and in the past three-ish years I have started eating fish again, partly because of trips to Phillipinnes and Cuba and also because I got fed up of 'pasta stir-fry' when eating out.
We still eat a lot of veg food, esp when away in the van because it is easier to manage, no grease, smells etc and nothing going off.
I usually cook two meals before we go, a ratatouille-type thing with pasta and beans already in it, and a veg and chickpea curry, served with naan and rice and BEER!!!
We are going away on Friday morning, somewhere west, to get into the Atlantic again, first time this year, very late for us. Daughter just finished Leaving Cert.

Hi Ca,chickpea curry ,especially with beer is one of my favourites!
A few things I usually prepare in advance to take away are:-
batch of lentil burgers(I'll post this receipe soon)
big icecream tub full of veg stew(my kids can't get enough of it)
veg sausage mix with sundried toms and fresh herbs
batch of pre mentioned kidneybean kievs
ready chopped veg in a tin foil packets,straight onto the bbq on arrival
cold wine n beer

Yes curry is always a great dual dining food - make same sauce, chicken in one pan, veg or paneer in other pan. Tikka masala great favourite - fry an onion, mix with tablespoon or 2 of curry paste when browned. Add 4 tbspns yoghurt, teaspoon lazy garlic + lazy ginger, carton of passata (or tinned toms if dont have), add chicken to one half for 20 mins, whatever non-dead creature you fancy to other half in another pan.
Otherwise I'm heavily in to risotto at the moment, red wine or leek and lemon- himself will have on the side of a chop.
