We are travelling from Cherbourg to South of Spain in January and would appreciate any advice about best route,etc.

Well the best route is going to be difficult to provide at this time as we are not sure on the weather conditions you will encounter.

I would suggest, getting a map and plotting your preferred route, and then as a just in case, at various places, look for some diversion routes, I would plan several routes for the more mountainous areas.
