Following on from the scones or scones thread. Now we have decided what we want to call them. Scones, as in cones, in my opinion, I will ask another question:-


What is the correct way of preparing scones with jam and cream

Do you put the jam on first?
or
Do you put the cream on first?

My personal choice is dictated by whether I have butter or not. If with butter, then butter, jam, cream in that order. If no butter, then cream then jam.

Jam first then cream - has to be clotted cream too! No butter - that's for cheese scones.

Prefer raspberry jam to strawberry too.

I'm sure that our West Country friends on here will confirm it, but doesn't which comes first depend on whether you are in (or support) Devon or Cornwall?

If it is Cornish Cream then apply that before the jam as it is a stiffer cream. If Devon Cream you must apply the jam first as it is impossible to spread jam on top of Devon Cream.

If you take the easy way out and spread cream on one half and jam on the other and bring them together like a sandwich you get only half the amount of cream & jam which defeats the object!

Having re-read the thread title "Jam first or butter" I find I do have a preference. If we are having both it absolutely must be butter first and I would only forgo the butter, very reluctantly, if there was cream, Alan.
