Yes it would cope quite well with it the newer 2.3 is a great engine, I had one in a Voyager 685 and regularly towed a Goldwing and trailer throughout Switzerland no problems etc
I think you would see around 22.5 to 23.5 honestly, a lot of people say they get more but I travel at around 65mph generally on motorways and this is the figure i worked out over 14500 miles of travel.
Obviously the bigger engine would be better but thay are not so available, go and take it for a test drive
You have said that it is a 2.3JTD, but the 2008 models were on the X250 chassis and used the 2.3Multijet engine.
If you have an X250 with a 2.3Multijet then it will be perfectly ok for the weight.

I am 4 tonne and tow a Toyota Aygo behind, no problem, and fuel consumption 23 -24 mpg realistic, trip computer inaccurate, I heard
people claim 36 mpg towing a Toyota Yaris ?
They might claim it, I don't believe a word. Claimed MPGs are a bit like the fisherman's one that got away.
2.3 is plenty enough...3.0 nicer, but not necessary.
I get approx 21MPG pulling Fiat 500C (1 tonne), 23-24 MPG solo...mix of A-roads and motorway. I find time of year makes a 10% difference...these are winter figures, better in summer.
That's a 4 tonne Autotrail Cheyenne 696, with overcab.
You could also consider a remap by someone like WOW Power if you felt you needed a little bit more torque and power. Don't expect much of an increase in MPG though.
The 2.3 should be fine. Check that it has had the Fiat clutch/gearbox mod to eliminate the possible judder in reverse. Most important, take it for a test drive before buying, take into account it is empty of any belongings and will seem very powerful, add half ton of stuff and it will be slower.
Make sure you do the reverse test, preferably up a steepish hill.

I've got a 2011 Autotrail Mohawk with the 2.3 multijet. It's 7.5 metres (24ft 7ins). MGW is 4250kgs.
I've found it to be adequate. Been down to southern France and up some pretty big hills. It's never struggled with anything I've thrown at it. I usually travel about 55mph on the motorways and it averages between 25 - 27mpg. That's a real figure calculated on every fill up over 5000 miles. Trip computer actually reads about the same (maybe a tiny bit optimistic).
Not driven a 3.0 litre. I'm sure it would be nice but the 2.3 is really not a problem. I've not towed with it as yet.
got the 2.3 on a bessacar E560 was initially doubtful about the pulling power having struggled with a 1.9td previously , so had a remap done before i picked it up i find it unbelievable i am heavy footed and on the way down to my mates cruised comfortably at 70/75 up hill down dale computer said mpg 24.5, so tested it full tank 200 miles fill up again this gave me an mpg of 26 , computer had now moved to an aggregate 25mpg did total of 2,500 miles computer gave aggregate of 25.8,
