I have both and couldn't recommend the D300 more.
The D300 was bought as a backup for my D3 but I find I use it instead of especially when I don't want to lug the extra weight/size about and it's also quicker to download (files are still 26mb). It does everything that I want the D3 to do apart from having the beep as default setting!.
Make sure you get Capture with it as you need it but bear in mind that Capture is now a great tool and I virtually never use photoshop anymore.
The 18-200 is not my favourite lens as it's maximum aperture is a bit small and it's wide end isn't wide enough although as with Nikons other VR lenses the image stabilisation is superb and I can shoot long on my 70-200mm 2.8 handheld down to 1/8th of a second and the 200-400 4 at 1/90th!! .
The maximum aperture is only a problem re depth of field as VR essentially gives more stops for low light and in any case the noise on the D300 is well controlled right up to 3200asa.
