I'm looking to replace my s7000 after many years of good service.
I'm a little confused to which of the above cameras is the best. I believe the s100fs is the older model of the two, but that, in my opinion doesn't mean it's not better than the newer one. As when i read the specs, it tells me of all these new things, but i haven't a clue if there any good or helpful for that matter.
Maybe it's the devil you know in your case, but I'm with Clive. I wouldn't initially contemplate any camera other than Canon or Nikon. Look elsewhere only when none of their current models meet your requirements.

So do Nikon and Canon do Bridge cameras. If so, any hot tips.
I generally take pics when out walking with others, so wouldn't have the time to start messing about with lens etc. Add to that, i have had some wonderful pictures over the years with my S7000, so a bridge camera seems to be perfect for me.
I recently purchased a Panasonic Lumix, with the Leica lens, superb camera, you can either point and shoot in auto, it does have a few options not fully manual, but it allows Elaine to take some great shots.
Got a Canon SX 10 bridge camera about 6 months ago. I wanted to get back to doing a bit more that point and shoot, and this camera has all the manual options. After alot of playing around, I find it hard to beat the auto setting. Excellent macro and 20x lens, only downside for me was no filter ring. However some guy in the states has come up with an adaptor to take 58mm filters which has overcome that issue. So I am back to point and shoot again but with much better results!
