Especially for MrsW the chutney served with the ram roast at Cornish Farm Rally.

Beetroot Chutney Recipe
Ingredients:
3 lbs Beetroot
1 Large Onion
1 Large Cooking Apple
2 large oranges
12ozs Sugar
2tspns Ginger
Level tspn Salt
1 Pint Vinegar

Method:
1. Cook beetroot and dice into small pieces (undercook as will be cooked more later)
2. Peel and dice onions
3. Peel and dice apple
4. Peel oranges, removing pith from the peel and flesh. Cut the peel into thin strips and chop the orange flesh, discarding any seeds.
5. Put into large pan and add sugar, salt, ginger and vinegar.
6. Bring to the boil and simmer until ingredients are soft.
7. Fill jars (which have been washed, dried and placed in warm oven) and label.
